Jalapeno Stuffed Burgers

  • Peppers, sweet, red (bell), roasted, canned or jarred -- drained oz 7 1/2
  • Sugar, granulated tablespoon 1
  • Salt -- divided teaspoon 1 1/4
  • Beef, ground, extra lean, (approximately 17% fat), raw lb 1 1/2
  • Cheese, cream -- softened oz 3
  • Peppers, jalapeno, raw -- minced or 2 Tbsp. chopped green chilis medium 1
  • Buns, hamburger roll 4
  • Onions, raw -- sliced, optional for topping medium 1
  • Peppers, jalapeno, raw -- sliced, optional for topping medium 1

Methods/steps

  1. To make pepper ketchup: Process peppers, sugar and 1 tsp. salt in a blender. Pour into a small saucepan and cook over medium heat 4 minutes or until thickened.
  2. Combine ground beef and remaining 1/4 tsp. salt - shape into thin patties.
  3. Combine cream cheese and jalapeno pepper - divide evenly in the center of half the patties (do not spread to edges).
  4. Top with remaining patties and press edges to seal.
  5. Grill covered with grill lid over medium-high heat 4-5 minutes per side or until done.
  6. Serve on buns with pepper ketchup and desired toppings.
