Cheddar Roasted Red Pepper Pinwheels

Ingredients:

  • Pork, bacon medium 4
  • Garlic, raw -- minced clove 1
  • Onions, raw -- or shallot, chopped cup 1/4
  • Peppers, sweet, red, (bell), raw -- roasted, skinned, seeded and chopped medium 1
  • Cheese, cream oz 8
  • Cheese, cheddar, grated/shredded lb 1/2
  • Oregano, ground (dried) teaspoon 2
  • Salt -- to taste dash 1
  • Pepper, black, ground -- to taste dash 1
  • Tortillas, flour -- (12-inch) extra large 4

Methods/steps

  1. Cook bacon until crisp. Crumble the strips.
  2. Add onion or shallot, and garlic to bacon, saute one minute.
  3. Set aside. Add red bell pepper, cream cheese, cheddar cheese, oregano to bacon mixture. Season with salt and pepper as desired.
  4. Transfer to a food processor and blend.
  5. Spread blended mixture over one side of each tortilla and roll up.
  6. Cut rolled tortilla into 1/2 inch slices.
